Dr. Susan Baker is currently a Professor and Extension Specialist in the Department of Food Science and Human Nutrition at Colorado State University.
The training and development of nutrition peer educators is one of Susan’s passions. She coauthored a book entitled Maximizing Paraprofessional Potential. More recently, Dr. Baker led the 2023 revision of the healthy eating and active living curriculum Eating Smart ● Being Active . She has served numerous leadership roles in NC3169 EFNEP Multi-State Research Project. Dr. Baker’s research interests include the evaluation of nutrition education interventions with families of low-income and increasing the research-base of adult EFNEP.
