Tennessee ranks 43rd for poverty in the nation with 13.9% of people below the poverty threshold. Additionally, 88.8% of people below poverty identify as non-white making the majority of EFNEP’s target population racial minorities. Moreover, 32.7% of children who speak a language other than English at home are in poverty in the US. EFNEP programs must provide materials and resources that are linguistically accessible for all qualifying communities.
To meet this need, University of Tennessee EFNEP staff created a cookbook of recipes from many countries. Staff invited Tennesseans to submit recipes representing their cultures. Recipes were tested and vetted for ease, cost, availability of ingredients, nutritional quality and palatability. Fourteen recipes from six global regions were selected and included in both English and the primary language of the country of origin. A total of 2,225 cookbooks were distributed throughout Tennessee. Surveys of paraprofessionals indicated that 82% found the cookbooks valuable for their programs and 71% were likely to use the publication with CALD EFNEP audiences in their counties.
Ideas for how to use the cookbook to engage CALD audiences will be discussed as well as how to develop other materials and teaching methods to work effectively with diverse groups.
